Examine and pre-sort carcasses post-mortem during the harvest process for presentation to Food Safety and Inspection Service personnel who conduct mandatory inspection of all carcass and parts.
Perform initial pre-sortation of carcasses on a moving conveyor line as part of process to determine whether carcasses are wholesome and fit for human consumption. Identification and pre-sortation of the carcasses includes the head, tail, tongue, thymus gland and all viscera of each animal harvested.
* Performing physical and visual pre-sortation of product.
* Conducting pre-sortation and verifying condition of various organs, lymph nodes, complete cervical visceral and rail pre-sortation of all carcasses harvested.
* Addressing issues arising around the pre-sortation of product in accordance with regulations, guidelines and training.
* Assisting with post-mortem pre-sortation and maintaining all associated parts for veterinary disposition.
* All other duties as assigned by manager.
Requirements:
Education/Certifications: Prefer High School Graduate or equivalent. College or technical school a plus
Experience: Minimum of 1-year experience in the Fresh Meats industry preferred or other QA type experience or relevant education.
Computer Skills: Basic
Communication Skills: Must be able to communicate effectively in ALL Areas of communication: verbal, written, and reading.
Some Examples, but not all-inclusive area: giving verbal feedback to supervisors, other departments, and coworkers, compiling paperwork at the end of the day.
Special Skills: Frequent physical activities such as walking, climbing, standing and kneeling are required, including climbing stairs, ladders and walking on catwalks. Job responsibilities may require extended hours. (10 hours or more) This position requires the use of a knife and hook. Job could involve heavy lifting (50 lbs or more) individually. Work in hot and humid (80 100) environment.
