The Own Brands Department has an opening for a Product Development Leader-Bakery. This position is located in Dublin, California.
Position Purpose
Collaborate with cross-functional teams as the product development resource to develop new and reformulated bakery products from concept through retail execution including key sensory attributes, shelf life, nutrition facts, processing, safety, packaging, coding, and regulatory compliance. This position directly supports the growth of Own Brands.
Key Responsibilities include, but are not limited to:
* The Product Development Leader is expected to develop and approve new and reformulated bakery products based upon product quality, performance, and timelines. Includes conducting product sensory evaluation, researching product standards and attributes, product safety, and product shelf life, as needed.
* Oversee suppliers, including: sample and product information requests, specification development, and communication of product changes to address safety, performance, and/or regulatory issues.
* The Product Development Leader is expected to work with cross-functional team members in the completion of projects.
* Receives input and guidance from the Sr. PD Manager and/or PD Director on a regular basis.
* The Product Development Leader is expected to assist non-technical peers in overcoming technical hurdles.
* Finished Product Specifications - Draft new finished product specifications in Albertsons specifications database, including NLEA and ingredient statements. Route specifications for approval.
Qualifications:
* Baking Science training, from institutions such as San Francisco Baking Institute, American Baking Institute (AIB), or similar.
* Bachelor's degree in Food Science or related field, with specialization in Baking Science.
* 4 -- 7 years of experience in benchtop or lab, product development, manufacturing (QA or operations).
* Baking Science / Commercial Bakery experience is mandatory.
* Knowledge of baking science and applied baking technologies, including the basic functions of ingredients and their effects and purposes in baked products.
* Knowledge of key equipment and processing used in the commercial baking industry to produce breads and rolls.
* Knowledge of ingredient functionality, product formulations, and food preparation.
* Working knowledge of sensory evaluation procedures.
* Basic understanding of regulatory compliance (FDA, USDA, organic, kosher, various industry standards).
* Excellent time management skills and proven track record of successfully managing multiple projects in a fast-paced environment.
* Knowledge of microbiology and food safety of RTE and NRTE products.
* Working knowledge of basic laboratory analytical equipment (pH meter, refractometer, simple titrations, various measuring devices, etc.)
* Working knowledge & understanding of manufacturing equipment, systems and environments.
* Proficiency with MS Office and various Working knowledge of packaging technology to evaluate adequacy of packaging.
* Nutrition databases (ESHA Genesis).
Travel Requirements:
* Travel beyond 50 miles is less than 10%.
* Travel to local (Richmond) bread manufacturing plant ~ 25%.

In 1939, Joe Albertson, a former Safeway district manager, took $5,000 he saved and $7,500 he borrowed from his wife’s Aunt Bertie, and partnered with L.S. Skaggs to open his first Albertsons store on 16th and State Streets in Boise, Idaho. Joe knew the keys of running a really great store, and it was all about working hard for the customers: give them the products they want, at a fair price, with lots of tender, loving care. Joe was innovative, too. He had one of the first in-store magazine racks in the country along with a scratch bakery and fresh ice cream made in-store. He worked hard, seven days a week, on his vision to build his company, and through his inspiring work ethic and tireless
determination to run the best store, the first store thrived. Just two years later, he had opened two other stores in neighboring communities and grew the fledgling company’s sales to over $1 million by the end of 1941.
